Last night for dinner, I felt like taking my sweet ol’ time drinking a beer and cooking.  It was marvelous.
I made a Thai coconut seafood curry, saffron rice and naan.
For the curry, I used:

Maine Mussels (under $5 from Whole Foods, best deal ever)
Trader Joe’s Seafood Blend
Organic coconut milk
Red curry paste mixed with a sweet Thai noodle curry paste
Garlic, onion, spinach, zucchini, cremini mushrooms, red bell pepper

I think that’s it … Anyway, it was colorful and delicious, if I do say so myself.
AND it makes for a great recovery meal after an intense track session and core workout.  I think.  I don’t know.  I’m really hungry.
